Chipotle Inspired Chicken Bowl

I had my first Chipotle experience a few months ago and had their delicious chicken bowl. I got home and decided I needed to recreate this and came up with a mexican bbq fusion chicken bowl and it is hands down my favourite dinner right now. This can easily be tweaked with your own seasoning and ingredients.

Mexican BBQ Chicken Bowl

Ingredients:
2lb chicken thighs
2 bell peppers chopped
1 small onion chopped
1 cup baby spinach (lettuce) chopped
1/2 cup cheese shredded
Cilantro
1/2 avocado chopped

Marinade:
2 tbsp chili seasoning
1 tbsp cumin
1 tbsp hot sauce
1 tbsp chopped garlic
1 tbsp lime juice
1/8 cup bbq sauce

Warm up bbq to medium heat. Chop veggies, mix marinade ingredients and combine all together to marinate chicken and veggies for 15min. Barbeque chicken, peppers and onions until cooked through, I use a grilling pan for the veggies for aprx 5 min per side with the or until cooked through. In the mean time chop avocado, cilantro and shred cheese. Take everything off the grill and slice chicken and layer chicken, baby spinach, veggies, cilantro, cheese, avocado and top with salsa and a dollop of sour cream or greek yogurt if you’d like. Occasionally I’ll make 1/4 cup of jasmine lime cilantro rice. Chicken could easily be swapped out for shrimp, steak or tofu. Of course if you customize this recipe anyway you’d like.
