In April I spent an amazing few days in a mansion in Tampa with 9 amazing ladies and our group effort breakfast inspired these delicious mexican breakfast wraps. I love breakfast and enjoy coming up with new delicious variations to keep it interesting, I must say that this is my favorite recently. It also coincides with my latest avocado obsession (you can read about it here).
Mexican Breakfast Wrap Ingredients
Ingredients are per wrap
2 tbsp chunky salsa
1 tbsp crumbled feta
salt & pepper to taste
1 whole wheat tortilla
Scramble eggs in pan (salt and pepper to taste). In the mean time chop and mush avocado onto the tortilla for your first layer. Add eggs and top with salsa and feta. Wrap up and enjoy this blast of flavor in your breakfast wrap!
This is the fastest easiest version, if I feel like putting in more effort I add the extra steps below. Both are equally delicious.
With a little extra effort:
4 cherry tomatoes
2 tbsp onion, diced
1/2 green pepper, chopped
1 tbsp lime juice
Saute onions and peppers, add eggs and scramble in pan (salt and pepper to taste). In the mean time chop and mush avocado, dice tomatoes and combine with lemon juice and a dash of salt and pepper to mix up a quick guacamole type paste. Get out your tortilla and put the guac down the middle, add eggs and top with salsa and feta. Wrap up and enjoy!
