This refreshing zucchini zoodles salad should be called summer in a bowl, I absolutely love it! I came up with the salad just playing with my spiralizer. The fresh lemon and honey combine with the veggies for almost a slight apple type sweetness and I regularly get requests for it. If you don’t have a spiralizer I’ve also made it with a food processor that just thinly sliced the fresh zucchini from my Grandpa’s garden. A mandolin type slicer with the finest setting would work okay as well. I recommend one small zucchini per person because this salad looks like it’s going to go farther than it does. Mix it up and put in your favorite sliced vegetables like bell peppers, cucumbers, tomatoes. Zoodles Salad Recipe:
1- small zucchini per person
1/2- large cucumber
1/2 fresh lemon
1 tbsp of honey
Slice zucchini (and any juicy veggies like cucumber) julienne style using a spiralizer or vegetable dicer and let drain on paper towels to get rid of excess water or it will be too juicy and water down the flavor of the lemon and honey. Slice remaining vegetables. Mix all veggies together in a bowl with lemon and honey (adjust taste to preference). If you are making this for 4+ people use a whole lemon and double the honey.
